Our limited edition exclusive Single Cask 7 Year Old Single Malt with West Cork Distillers is finally ready for sharing. After our hugely successful collaboration back in 2020, we knew immediately that it was something we wanted to do again. We are proud to put our name to this 7 Year Old Single Malt which we selected from West Cork Distillers very impressive ageing warehouse. This whiskey spent 4 years in Oloroso sherry butts followed by a further 3 years in first fill bourbon casks. Bottled in April 2023 at 54.7% ABV, it is non chill filtered and has no added colour. The initial Oloroso butt ageing gives this whiskey dark flavours of figs, raisins and a lovely nutiness, with notes of marzipan and malt biscuits. The bourbon barrel finishing reins it in and gives this whiskey its great depth and complexity. A beautiful oily mouthfeel finishing with a smooth, long finish.
