A chance encounter and brief chat about food waste and sustainability led to a collaboration between Otterbank and Yum Cakes bakery in Derry last year. They mixed brownie leftovers and off cuts with a big hefty stout malt bill of Irish pale malt, oats, chocolate and roasted barley. After primary fermentation they aged the rich, black nectar in ex mezcal tequila barrels before packaging. This liquid chocolate cake has a big, punchy, cocoa and oak aroma with lots of dark sugar and more chocolate on tasting. Thick, sweet and decadent.
