Dingle Single Pot Still Second Release is a limited-edition expression that highlights the distillery’s commitment to Ireland’s historic pot still style. Made from a mash bill of malted and unmalted barley, the spirit is triple distilled in copper pot stills and matured in a carefully selected mix of casks, typically including ex-bourbon barrels alongside fortified wine casks such as port or sherry. This combination enhances both richness and complexity while preserving the creamy, spicy character typical of pot still whiskey.
On the nose, the whiskey opens with aromas of orchard fruits, vanilla, and honeyed malt, layered with subtle dried fruit and warming spice. The palate is smooth and textured, revealing flavours of baked apple, caramel, toasted nuts, and gentle peppery spice, complemented by hints of oak and sweet grain. The finish is long and warming, with lingering notes of citrus zest and soft spice.
