This is the third release of this wonderful collaboration between Antonio and Daniela of Cantina Giardino and Jean Van Roy of Brasserie Cantillon. The Drogone Lambic is a three year old Lambic from Cantillon, infused with three hundred grams per litre of Aglianico pomace leftover from the maceration of their Drogone. A young Lambic is added for the second fermentation. A vivid shade of ruby in the glass, this is incredibly vinous, with a cascade of sour, bitter and earthy notes offering refreshment and complexity.
